I was eager to do the course but also very nervous - I suffer from anxiety so new situations can be a process for me. Once I started doing this course I started to come out of my shell more each day. Joshua and the team at Twin Rivers really make it an easy experience - you really feel a part of something. A few weeks had passed and I had settled in to the kitchen, It was a great experience and I was feeling good - I haven't felt like that for quite a while. Our first big cook up I was put on the deep fryer and we were making Doughnuts - one of my favourite things on the planet. I was put on the Deep-fryer and tasked to cook off about 250 Doughnuts! To this day I still haven't eaten a Doughnut again. My self esteem has grown more and more and I was even given the task to lead teams in cooking with various dishes. I never thought I’d have the confidence to do this but I really found myself in my element. I have now been to interviews to become an apprentice chef and every time I go to them I get more confidence and advice on how to handle them properly. Overall my experience at Twin Rivers has been an amazing one and I recommend this course to anyone. I have become a better cook and overall a better person. I also now have a JOB! - Steele Park
